Do you have a favorite recipe to share? :D I LOVE to cook (and eat!) but I always like to see what everyone else loves to cook. I just discovered a great recipe that I made the other night from Kraft Foods. I used the reduced Cream of Celery though. It sorta has a chicken and stuffin' flavor to it!

A happy accident! My hubby left a can of Rasberry Peaches in the freezer to cool...and forgot them. I found them the next day frozen solid. I ran the can under hot water to loosen the fruit, opened it and then inspiration hit! I put itin the cuisenart on run and added a tablespoon of splenda and voila and 2 tablespoons of cream- and the best sherbert you ever wanted to taste! quick too!

A huge task at my house is finding something everyone likes! There are a few recipes that meet this requirement. One being the Mexican Lasagna.
4 -6 Tortilla shells (instead of noodles)
1 lb.lean ground beef
1 jar salsa
2 cans fat free refried beans (or one big can)
16 oz. shredded cheese (mexican blend or mozzarella)
Brown ground beef and mix with salsa and refried beans. In a 9x 13 baking dish put a layer of the beef mixture, add a layer of cheese, then two tortilla shells, repeat. make sure top layer is cheese (similar to layering a regular lasagna) bake until cheese on top is melted.
Toppings: Put in bowls and let everyone add their own toppings
Lettuce
Tomato
Black Olive
Onion
Sour Cream

I love easy. Here is a very easy dessert bar that is wonderful, easy, and a hit everywhere I take them:
Cheesecake Cookies
3 rolls of Chocolate Chip Cookie Dough
3 8-oz. pkgs. cream cheese, softened
2 eggs
3/4 cup sugar
1 1/2 teaspoons vanilla
Preheat oven to 350°. Spray an 11x13-inch pan with Pam. Slice 1 1/2 rolls of cookie dough in the bottom of pan and press in. With mixer, beat cream cheese, eggs, sugar, and vanilla until smooth. Pour on top of cookie dough and spread out. Slice remaining cookie dough on top. Bake for 50 – 60 minutes, or until set. Let cool. Refrigerate.
Makes 24 cookies

Here's another easy, yummy bar recipe:
Sunburst Lemon Bars
Base
2 cups flour
½ cup powdered sugar
1 cup margarine or butter, softened
Filling
4 eggs, slightly beaten
2 cups sugar
¼ cup flour
1 tsp. Baking powder
¼ cup lemon juice
Glaze
1 cup powdered sugar
2 to 3 tbsp. Lemon juice
Heat oven to 350°F. Lightly spoon flour into measuring cup; level off. In large bowl, combine all base ingredients; beat at low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake at 350°F. for 20 to 30 minutes or until light golden brown.
Meanwhile, in large bowl, combine all filling ingredients except lemon juice; blend well. Stir in ¼ cup lemon juice.
Remove pan from oven; pour filling over warm base. Return to oven; bake at 350°F. for an additional 25 to 30 minutes or until top is light golden brown. Cool 1 hour or until completely cooled.
In small bowl, combine 1 cup powdered sugar and enough lemon juice for desired glazing consistency; blend until smooth. Glaze cooled bars. Cut into bars.

I have made those choc. chip cookies and they are awesome!!! Not to mention extremely easy! I'm getting hungry now!
Donna...that sounds great! I will have to try that out. I love good Mexican ones. :)

Have you ever heard of Paula Deen. She has several cookbooks out. It's a must have. She owns a restaraunt in Savannah Ga.
Google her name you will find her. Most stores sell her cookbooks or at least they do in the south. (chicken pot pie is the best)!

This is a recipe that I found a couple of year back. You can use either crawfish tails or shrimp. I have a picky 10 yr old and she eats this.
Ingredients:
2 pounds crawfish tails, chopped
1 box jumbo pasta shells
¼ pound butter
1 cup minced onions
½ cup minced green bell peppers
½ cup minced red bell peppers
6 tsps minced garlic
4 tbsps Worcestershire sauce
2 tbsps Louisiana hot sauce
salt to taste
Creole seasoning to taste
2 eggs, beaten
½ cup grated Parmesan cheese
1 cup Italian bread crumbs
Method:
Preheat oven to 350°F. Boil pasta according to package directions until al dente and set aside. In a medium saucepan, melt butter over medium-high heat. Add onions and bell peppers. Sauté 1–2 minutes or until wilted. Stir in garlic and crawfish tails and heat thoroughly. Blend in Worcestershire, hot sauce, salt and Creole seasoning. Remove from heat and allow to cool. Add eggs to crawfish mixture. Fold in Parmesan cheese and bread crumbs. Stuff each pasta shell with an equal amount of crawfish stuffing. Place shells in a 9" x 13" baking pan. Cover with your favorite pasta sauce or alfredo. If desired, create a sauce by blending 2 cans cream of shrimp soup with ½ cup white wine. Bake 15–20 minutes or until stuffing is completely heated.

Here's an easy dinner, especially if you work or are gone most of the day.
Crockpot Chicken
Make 4-5 tin foil balls (just crumple up tin foil). Spray the inside of your crockpot with Pam Olive Oil spray. Place the tin foil balls in the bottom. Take a whole chicken (not cut up). Wash it well and spray it with Pam Olive Oil spray. Sprinkle it generously with Lawry's Seasoned Salt (no substitutions!). Place the chicken breast-side DOWN on top of the foil balls. Cover and bake on high for at least 6 hours (do not add water). It tastes just like a rotisserie chicken you buy. Yummy!
