Make-Ahead Mediterranean Dip
Try this exotic but easy-to-prepare dip as an appetizer at your next party. Your guests will appreciate the departure from the tired old standards like spinach dip and the like.
1 ½ C. store-bought hummus
½ t. freshly-cracked black pepper
1 C. seeded and peeled finely-diced cucumbers
¾ C. diced red onions
1 C. diced cherry or grape tomatoes
½ C. diced kalamata olives
1 C. crumbled feta cheese
Store-bought pita chips
In a 9x13-inch shallow baking dish, spread the hummus in an even layer. Sprinkle with pepper and then layer cucumbers, onions, tomatoes, olives and cheese in the order listed. Serve with pita chips to dip. This may be made ahead of time and refrigerated until ready to serve. Serves 12 as an appetizer.
