Make Chicken dumplings
using your crock pot -- add in Chicken broth and cut up chicken
let it cook all day --
then about 2 hurs before you are ready to eat
throw in some refrigerator bisquits that you tear into little pieces.
you could add carrotts and celery -- or what ever other seasonings that you want.

I use boneless, skinless chicken breasts. What I do is rinse them off, put them in a covered oven dish, drizzle honey on them, put the cover on and then bake them til they're done. Really easy and healthy.
Another quick easy way is to put apricot preserves on them and bake them.
Another way is to cut the chicken into strips and stir-fry it with some fresh veggies - carrots, celery, green red and yellow peppers. Then add a little pineapple juice and honey and serve it over rice.

We like to marinate boneless, skinless chicken breasts in Italian dressing overnight ( or at least a few hours ) and then either broil or grill them. They are so juicy and delicious.

Here is an yummy recipe and soooo easy:
CRANBERRY CHICKEN :p
Need--1 16-oz. bottle of fat free Catalina, Russian, or French dressing, 10-12 boneless chicken breasts, 2 cans whole berry cranberry dressing, 2 pkg. onion soup mix (don't add water).
Stir together all the ingredients. Pour over breasts and bake 350 degrees for 1 hr and 15 min. Serve with rice.
Makes me hungry just thinking about it. I've done this for a dinner party and the breasts are always so tender.

This is an old, easy meal my mom always made (Good ole comfort food!) Bake chicken breasts covered with cream of mushroom soup in oven at 300-325 degrees for about and hour and 30 minutes. Serve with homemade mashed potatoes and your favorite veggie and side serving of fruit and big ole glasses of cold milk. (Hot biscuits optional) This was great on cold winter evenings like tonight!

I make the chicken that lileduk8r makes but I use Thousand Island Dressing and put a jar of apricot preserves in it as well. It's finger licking good!!
Another thing I do when I'm not counting calories is i cut the chicken breasts open and stuff them with cream cheese. I put a brown mustard on top of the chicken and then sprinkle brown sugar on top. I don't remember the cooking time but I check it after 30 minutes. It tastes so much better if it isn't over cooked!
Sometimes I make honey mustard and cover the chicken in it. Then I cover the chicken in crushed butter pretzels. I fry it quickly, just till it's light brown and then finish cooking in the oven or microwave.
The last idea is to cut the chicken breasts into small pieces. Cook it in a frying pan with BBQ sauce, just till done. Spoon the chicken mixture into Crescent rolls and bake according to directions on the rolls. I use the dough for two rolls for each sandwich. Lay the dough on a cookie sheet and after spooning the chicken onto the roll, just wrap the dough around the chicken as best you can. It doesn't have to be completely closed.

A recipe that we like is to use a can of French's French Fried Onion Rings (the ones you use on the green bean casserole). Mash them up a little, add some parmesan cheese if you like. Dip chicken breasts in egg, coat in the onion/parmesan cheese mixture and bake for 20 minutes.
