I am looking for some yummy, quick meals to fix for myself for dinner. I already make spaghetti & meatballs, tacos and breaded chicken. Anyone have any other ideas for easy dinners besides lean cuisine? ;)

Here is an easy favorite at our house we call Italian Chicken:

Put chicken pieces in greased oven dish w/ chunks of potatoes & baby carrots. Pour italian dressing over all (not the creamy stuff, but the *clear* stuff), then sprinkle with parmesan cheese (we use the stuff from the can). Bake til chicken is done.

That's it!!! yum :bliss:

Sometimes I like to fix a meatless dish like pasta: boil pasta and drain, mix with chopped tomatoes, fresh parsley, chopped green onion tops, garlic minced or powdered, grated parmesan cheese and mix with olive oil salt and pepper.

I like to use whole wheat pasta or spinach for a healthy choice. I have a green salad to go with this.

This is super easy and a hit at our house. Take 1lb ground hamburger(browned), 3/4 lb egg noodles (cooked), 1 can cheddar cheese soup, I jar pizza sauce. Mix it all together and cook, covered in a 350 degree oven for 45 min. Uncover and top with shredded mozzarella cheese and bake another 10-15 min. We call it pizza casserole.

p.s. also good with mushrooms added.

Take strips of raw chicken and stuff uncooked manicotti noodles. Lay in a baking dish lined with foil for easy clean up. Pour a large jar of spaghetti sauce over noodles. Cover and bake at 350 for 1 hour. Top with mozzarella cheese at the end of baking. I love this one because there is no prior cooking of any ingredients.

A pretty easy meal thats not to bad is Taco ring.... just fix you hamburger meat with taco seasoning however you like, then the pilsbury crescent rolls...lay them out the triangles next to each other...smallest part on the outside...put meat on each part of the rolls all the way around the circle, add cheese, fold up the roll BAKE! then add tomatoes, sour cream, whatever you wish!!

I make (at least once a week) what the kids call "quickie chickie". I take boneless, skinless chicken breast, 2 cans cream of mushroom soup, 1 bag frozen brocolli (sp?) and put in 13x9 baking dish. Cover with tin foil and bake in 350 degree oven for 45 minutes. Take foil off and stir and put back in oven for 15 minutes. Soup makes gravy. Stir and serve with noodles, rice, potatoes. Your choice. :yum:

Hello Ladies, I know this probably sounds wierd, but I brown ground beef with a small yellow onion till the beef is done and the edges of the onions are brown, drain it, add a can of dark red kiddney beans, a large bottle of salsa or 2 cans of Rotel, 1 pkg. of hot chili seasoning and a 12 oz bottle of bud light. let it cook for a while eat it over corn bread with white cheddar, it sounds like a lot, but it is real eazy. I also have a heavy pan that I use to make my chili in that I seasoned over a camp fire!! Makes it even better!

I love to cook with beer, it gives the food a rich taste, I usually use Cherry Wheat Samual Adams.

Hawaiian Chicken

1BBQ chicken dice meat and discard skin &bones
2 sticks celery-sliced
I red capsicum-diced
I onion- diced
I can tomato soup- don't add water
I small can pineapple pieces with juice
1-2 teaspoons curry powder
2 tablespoons brown sugar

In a pan fry onion, capsicum& celery then add curry powder & brown sugar and fry a little longer. Then add soup, pineapple & chicken and let simmer. Serve with vegies or rice. Takes about 10 mins

Here's a week of dinners, only one takes more than 45 minutes!
Day 1 - Roast a 3 pound chicken. Cook enough rice or potatoes for one other meal. (before you put away the left overs, set aside the required amount for tomorrow and assemble the next days dinner too!)
Day 2- Make the Chicken pot pie on the back of the BISQUIK box
Day 3- With the left over rice or potatoes from the other night - grease a casserole dish. If you have potatoes, put them in first then the chicken if you have rice, put the chicken in first then the rice. Add a couple handfuls of frozen mixed veggies and a can of campbells golden mushroom soup. Bake uncovered for 25 minutes at 350. Sprinkle with jack or mozza cheese, return to oven until cheese melts.
Day 4 - Brown 1 pound of ground beef with 1 small onion and 1 minced garlic clove. Add salt/pepper to taste. Add 2 squirts of worchestershire. Add 2 cups of shaped pasta and 1 14 ounce can of diced tomatoes. add just enough water to cover. Simmer until pasta is cooked (alternatively, you can boil the pasta in a separate pot and add it in.
Day 5 - Start rice, potatoes or pasta. Coat fish fillets in fine cornmeal and bake for 15 minutes at 400 or until it flakes apart. Side dish should be cooked.
Day 6 - In a greased casserole, pour 3 cups of small diced frozen hash browns, 1 can of sliced mushrooms (drained), 1 can of french style beans (drained), 1 cup of cooked chicken or ham, 1 can of cream of mushroom soup. Mix well. Sprinkle fine breadcrumbs over top and bake 375 for 30 minutes
Day 7 - Clean out the fridge and have a "buffet"
If you are a single or couple and this makes too much food, I freeze single portions and never know what I am taking for lunch until lunchtime when it's thawed out.

Boil boneless chicken breast in onion soup mix and water, and serve over rice. Doesn't get much easier than that!

This is a "Greek recipe" tried & truly delicious!
I'm sure if you try it you'll love it! It takes 45 minutes to cook & about 15 minutes to prepare. :yum:

STEP #1. In a large bowl, mix the following ingredients by hand, shape into round balls & flour lightly.
1 lb. ground beef
1/4 cup rice
1 teaspoon salt/dash off pepper
1 teaspoon dry parsley or fresh finely chopped
1 egg
1 finely chopped onion
2 garlic cloves chopped
*flour for flouring meatballs

STEP #2. Add the "below" ingredients to a medium sized pot, bring to a boil & lower to medium heat
4 cups of water, 2 cups tomatoe juice(or V-8)
2 tablespoons butter or margarine,
1 teaspoon salt.

*Add floured meatballs to pot & cook on medium heat for 45 minutes. Don't stir during cooking, but gently turn pot while holding both handles, to mix sauce & avoid it sticking to bottom. Remove from heat after 45 minutes. Sauce should have thickened.

STEP #3. In a blender add
2 eggs(blend on high)
add the juice of 2 lemons
& 1 cup of the sauce from pot.
Blend on high for one minute & pour mixture over completed meal, turning gently to mix sauce thoroughly.

* Use a ladle to scoop meatballs into shallow soupbowls & add lots of sauce over them. (Great for dipping bread).
Serve with bread & enjoy!
