What is Flemish Carbonnade? I have never heard of it and am too lazy to google. :D

I don't really follow a recipe but when I make it I do let the beef cubes and onions marinate in beer overnight. Then I flour the meat and brown it with butter, then put it in the crock pot with sliced carrots and turnips. I also add two cans of beef broth and a cup of water, along with the beer that the beef was in. Cook it on low for about 5 hours. It's pretty good if I say so myself. Turnips are high in fiber, calcium, and potassium so I use them instead of potatoes.

Well, I made one last night and it was a great success -- I got a recipe from a food critic's site here.
Basicly, I browned the beef, took it out of the cassarole, while I browned the onions. Put it back in, added beer (Leffe Brown), beef broth, thyme, bay leaves, salt pepper, a little brown sugar and vinegar, salt, pepper, brought it to a boil on the stove and then turned it down to a simmer.
Added a handful of dried porcini mushrooms, and before putting it in the oven, floated a couple of pieces of thick bread spread with Dijon mustard on the top.
Covered and cooked for about 2-/2 - 3 hours in the oven.
About 1/2 way through I added some flour shook up in a jar with cold beef broth for thickening -- I find the meat tastes meatier if not dredged in flour before browning + it's less messy.
Served it with potatoes on the side -- I wasn't about to try turnips on my crowd!
Don't ask me how many bottles of Leffe Brown we went through, okay?

Oh, jeezlouize! Let's say 8 for sure -- there were four of us, and I'd be ashamed if we didn't have two bottles a peice!
