Let's share favorite guest menus. Its not just about the main dish. ;)

My favorite guest menu:

Lasagna
Italian Veggies
Salad
Cheesed/spiced bread
Ice Cream and Brownies


Schnitzeled chicken
Pan fried potatoes
Steamed Green Beans
Watermelon slices
Chocolate chip cookies

-Spaghetti and meatballs (this one is about the main dish!)
-salad
-bread
-chocolate torte cake. mmmmmmm!

Another favorite:

-Chicken fajitas marinated in a jalepano/cilantro/lime sauce
served w/sliced pototoes, peppers, onions
all rolled up in a tortilla
-spanish rice
-brownies/ice cream

So good!

I have to say, that for my children their favorite is my home-made Chicken-Fajitas!! We even had them for x-mas dinner!
My favorite dinner that I enjoy the most is...
Filet Migoin w/ fresh Mushrooms!!
Teriyaki Lo-mein Noodles
Sweet Corn Bread
& Who has room for dessert!! lol
Since my Health & Medical Problems...I do not entertain any longer...But I used to make Spanish Dishes & BBQ's for guest!!

Recipe as requested by show me girl

Caramel Dumplings

1 1/4 cups self raising flour
1oz butter
1/3 cup sugar
1 teaspoon vanilla
1/3 cup milk

Sift flour, rub in butter, add milk and vanilla and mix well. If not moist enough to make dough add a little more milk. Roll into balls.

Sauce
1oz butter
1 1/2 cups brown sugar
1 1/2 cups water

Combine all ingredients in a large saucepan. Stir until boiling, reduce heatthen drop spoonful size balls of dumpling mix into sauce. Cover and simmer for 20 mins keeping a check it doesn't burn.

I usually have it all prepared and turn it on while eating our main meal. I hope you enjoy. I often double the sauce mixture as my family love the sauce.

I like the peppers because I make them in the slow cooker so I am free to chat until it's time to serve. ;)

At our house, we most always grill out for guests.

Steak, salmon or chicken
Stuffed baked potatoes
Tossed salad

We love to sit around the dinner table once the meal is finished and talk. So I will sneak into the kitchen and pop a pan of cookie dough into the oven. In a few minutes the smell of fresh baking cookies begins to filter thru the air. Even guests who would ordinarily turn down dessert will be unable to resist a hot, freshly baked cookie or two.

When we have guests, it could be :

Appetizer : shrimp cocktail, or smoked salmon, or Foie gras, or prosciuto with cantaloupe...

Entree : pepper steack, or breaded veal scalopini, or beef tenderloin, or duck magret, or duck confit, or pork roast... home made french fries, salad or veggies.

Dessert : ice cream with fresh raspberries/strawberries and liquor, or fresh baked pie (with either apples, italian prunes, blueberries, rhubarbe or cherries)

My favorite is duck pieces, wrapped in bacon, grilled. Serve with rice and a spinach salad. Yum!!!

Pretty basic for my family:

Summer is grilled meat,grilled fruit and veggies, salads, beer

Winter is home-made soups, stew, chilis and a variety of breads, wine. Occasionally, a pasta dish with salads.

For overnight guests, I usually do a stratatta which is easy to make and refriderate ahead of time.

By keeping things simple, I have more time to mingle and don't get so wiped out. I want to enjoy too!! :D

My dh is the cook in our house! Everything he makes is great, which is why I am overweight and he is too. He makes the best pork tenderloin and pork roasts. He seasons them perfectly and drizzels honey over the dry rub to add sweetness. He doesn't do much with veggies and we are not salad eaters. I guess you would say we are meat and potato people. For dessert we usually have ice cream or sometimes bread pudding but we get that from the grocery store. We don't bake much. My Dad was the baker in the family.

Grilled burgers and brauts
Potatoe salad
Fruit salad
Corn on the cob
Baked beans with lots of bbq brisket ends
(don't forget the KC Masterpiece bbq sauce)
Homemade pickles
Texas Sheet cake and home churned ice cream

Winter is usually,

Pot roast or baked chicken, with potatoes, carrots, zuchinni and hunks of garlic
Cooked apples
Cottage cheese
Coconut custard pie

I don't have anything specific, just depends on who is coming over. I remember as a kids loving the following menu. We only had it when Grandma & Grandpa stayed over for the weekend.

Chicken and Rice Casserole
Sour Dough Corn Meal Muffins
Coleslaw
Home grown corn (she'd freeze it & we had it all year, so sweet!)
Cherry Cheese Cake

Hmm, I wonder if I can get her to make that for us next time we visit?

Out on the grill..........steaks! (marinade over night)

garlic bread
Italian Cream Cake for dessert

Beef and Chicken Fajitas with grilled veggies

My DH grills some country ribs with twice stuffed potatoes or fresh corn-on-the-cob and ice cream with warm brownies for dessert. Jeannie, my DH is also a marvelous cook and I'm quite fluffy to prove it!

Schnitzeled chicken is most like fried chicken....

In a bowl beat a few eggs
In another bowl bread crumbs with seasoning (the box you buy at grocery store in the aisle near oil)

Chicken breasts without bones/skin removed

Melt 1/4 c of butter into skillet with another 1/2 c. veg oil. Heat slowly (watch that this does not burn)

Salt and pepper the chicken, dip in egg completely, lay in crumbs and cover carefully with crumbs. Place carefully in melted butter/oil. Fry. This is not a deep free but a pan fry, not alot of oil is needed. After 10 minutes, turn the chicken carefully, do not disrupt the crumbs.

Cook complete about 20-25 minutes (I don't know how long exactly. I watch for a golden brown color of the crumbs and a puffing of the chicken breast.

Remove from pan and place on paper towel. Serve with pan potatoes.

My MIL taught me to cook chicken this way and although we love it, we rarely do. Its "fried" and we don't eat fried anything but maybe once a year. :rofl:

She had a German restaurant (and she is german) and served schnitzel but it was veal and not chicken. I adopted it to a chicken breast since veal costs so much more $$.

This sounds really good. I'll have to try it after I get to my goal weight. I wonder how many points this has in it? Hhhhmmmmmm. I'll have to figure that out!

Nene - It is SOOOOOOO good! And then with German panfried potatoes....oh my! My tummy always hurts afterwards from all the friedness, but it is so worth it. :D

Grilled salmon on the barby along with asparagus.......and a fresh green salad..and wild rice....also garlic bread......
AND...Ben and Jerry's "Cherries Garcia" for dessert. We keep it simple around here......

((Kathy)) You can do the same thing by buttering a cookie sheet and baking them. They don't have the greasy yummies but they are still wonderful! My mil taught me to do it this way but I notice sometimes she fries them when she is in a hurry. I have also used cornflake crumbs with a little garlic mixed in.....:yum:

Yeah but then that doesn't make it schnitzell. ;)
