Hi,
I'm doing the menu planning challenge but I'm planning out menus that will fit the South Beach diet. In a nutshell I'm looking for recipes with no sugary dressings,lots of veggies or yummy variations on beef, fish or chicken. I would love some ideas for fixing some of the less expensive fish.( I know, non of it is cheap) Any ideas will be welcomed.

Well, I never ever put sugar on my salad dressing or when I cook vegetables or meat. I use sugar ONLY for making dessert.
I sweat onion pieces (tiny) in a tablespoon of oil (canola or grapeseed) then add the vegetable (could be carrots, green beans, red cabbage, zuchini..) and some water. Salt and pepper to taste. For red cabbage I will add a sour apple or chestnuts (canned in water). Carrots I mix with baby peas or baby kohlrabi. Zuchini I mix with tomatoes and finish the dish by adding a little whipping cream.

My family and I decided to go on the South Beach diet in January and while searching for some low carb recipes I found a recipe for a noodle free lasagana (http://www.recipezaar.com/83464) that my family just loves. It takes a bit more work than a typical lasgana but it's very good. Even my picky teenage daughter who hates eggplant likes this recipe.
It is easy to make vegetarian as well. Just substitute the meat sauce for your own vegetable or tofu based tomato pasta sauce.
I've made it 3 times now and it really does look and taste like real lasagana.

While I am unsure of what the South Beach diet allows, I have to eat "lower carb" to control my diabetes. I control it with diet only - no meds. Two products that I swear by is Dreamfields pasta and Carbquik bake mix. With these two products, I can convert traditionally high carb recipes so that I may enjoy them. I don't find any aftertaste or odd taste in either product. And I never use real sugar. When I must use sugar (rarely), I use splenda. My diet otherwise consists of meat, eggs, and vegetables. Very rarely do I eat anything "processed" other than the 2 items mentioned above. All my tests show normal blood sugar levels while I am eating this way, so it works for me.

Thank you for all the ideas here (((ladies))). I'm progressing with my menu planning and these are all helpful. I did a search for the lasagne and found the best site full of Low and no carb recipes. I love it. I'm going to try the foodfit site too. Just didn't take the time there yet.

Go search on the web. Use google and type in south beach. There are a ton of sites that all they have is recipes. I have stopped using my recipe box as I just go to allrecipes.com type in what I am looking for and find what I need. Then you can even put in how many servings you want and it will modify it for you, print it out and there you go. You can even type in an ingredient you need to use and find them. ;)
